Fillet of Sole Print E-mail

Ingredients

  • 3 medium potatoes
  • ½ teaspoon parsley
  • ¼ teaspoon onion powder
  • 18 oz bottle Mark’s “RED” Bar-B-Q Sauce
  • ¼ cup honey
  • ½ cup mushrooms
  • 4 oz. crabmeat (shredded)
  • 2 tablespoons butter
  • 4 Flounder (or Sole) fillets
  • Salt and pepper to taste

Directions

Peel, cook and mash potatoes adding parsley and onion powder. Set aside. In medium bowl place Mark’s “RED” Sauce, honey, mushrooms, and crabmeat. Mix thoroughly and set aside. Grease large skillet with butter, roll fish like a jelly roll, place seam side down, sprinkle salt and pepper, pour Bar-B-Q mixture over fillets. Cover and simmer 10 minutes. Remove fish to a warm serving dish. Arrange potatoes around fillets. Pour sauce over fillets and vegetables. Broil until tinged with brown.
